Man, oh, man was it cold this weekend! I stayed inside as much as humanly possible. Cooper felt the same way…
I honestly didn’t do much this weekend. I’ve just been sleeping (a lot) and relaxing. I mentioned briefly a few days ago I had a (minor) procedure. I’ve decided not to go into detail on this subject. Here’s what I will share… I currently have 5 stitches in my low back. I have one more procedure this coming Wednesday and I will soon have stitches on my chest. Sadly, workouts and yoga are out for February but I should be back to normal and all healed up by March. It’s been a little bit of an emotional month but I’m feeling better and really want to move on . So, please forgive my seemingly “boring” weekend, but all the relaxation was just what I needed.
Breakfast consisted of two fried eggs and two sausage links. It may not look pretty but it tasted delicious.
After breakfast I worked on cleaning out my personal email and unsubscribing from countless newsletters. I dread checking my personal email because it’s always full of junk. I decided to (as I’ve learned from Gretchen Rubin) “identify the problem.” The problem was that my inbox was full of store coupons I didn’t want to be tempted by (because I didn’t have the money to spend) and an overwhelming amount of nutrition/fitness tips. It definitely took time to unsunscribe from each account but it will be well worth it… and now checking my personal email won’t be such a dreaded task.
Later on, I “ventured” downstairs to the gym in our apartment building. Anything over 2.5 mph on the treadmill made me feel a pulling sensation where my stitches are in my low back so I kept it nice and slow for 2 miles. I finished up with some light arm work using 5 lb dumbbells. Nice and easy. Next up was lunch which consisted of leftover crockpot buffalo chicken served as a salad.
I’m not really sure what I did with the rest of my afternoon but for dinner we decided to go out for sushi.
Yum! Sushi definitely does not mesh with my attempt at eating low carb (…and for whatever reason I always want dessert after sushi), but it sure was delicious. When I got home I made myself this Easy Vegan Peanut Butter Mug Cake.
Happy Valentine’s Day! We ordered our groceries from Peapod this week and Josh was nice enough to bear the cold and pick them up. Negative degrees this morning in Morris County, NJ!
He also made a few other stops and brought back some chicken salad which I ate alongside carrots as a late breakfast/early lunch.
Up next was miscellaneous episodes of Gilmore Girls and Friends on Netflix. I did add in some meal prep (cooking ground turkey)…and a cocktail 😉 . What else is there to do when it’s too cold to go outside?! For an appetizer, Josh set up shrimp cocktail.
So fancy!! For dinner, he made us slow roasted filet with broccoli. Our go-to recipe is this one from Ina Garten/The Barefoot Contessa.
It was absolutely delicious, per usual! I’m wrapped up the night with some Ben & Jerry’s Chocolate Chip Cookie Dough Ice Cream.
It was a perfect weekend full of relaxation.
