Cinnamon Raisin Peanut Butter Overnight Oats

It’s no secret I love Overnight Oats for breakfast.  It’s easy to make, easy to store and easy to grab and go!  This weekend I decided to mess with my recipe a little bit and came up with Cinnamon Raisin Peanut Butter Overnight Oats.  YUM!

Cinnamon Raisin Peanut Butter Overnight Oats

Lunch was also great.  This past weekend I made this Mashed Cauliflower recipe and it’s pretty darn close to mashed potatoes.  Along with some sautéed broccoli, a piece of whole grain sprouted bread, some dijon mustard and two slices of chicken breasts it reminded me the tiniest bit of Thanksgiving dinner.

Workout

After I posted my Goals for the Week which stated I wanted to get in 4 moderate/intense workouts and 1 yoga class I decided to not workout after work and to, instead, go through my closet and storage.  I have so many clothes that I’ve never worn, don’t fit right, or I have nothing to wear with or to and it’s time I get rid of them!  So, last night I started with my closet and got almost all of it done.  The rule is everything must be tried on unless I’ve worn it in the past two weeks.  (This took some time but it was more than worth it!  I kept things I thought didn’t fit and it ended up getting rid of things I thought would fit great.)  Also, anything that comes in from storage (yay fall and winter clothes!) must be tried on before being hung up.  So far I have a large trash bag full of donate and 3 full reusable grocery bags full of sell.

I’m all about organizing and clearing out what doesn’t get used right now.  When I look in my closet and drawers I want to see clothes I can legitimately wear, not clothes I haven’t worn in months or years.

Cinnamon Raisin Peanut Butter Overnight Oats

If you love cinnamon, raisins and peanut butter you'll love this!
Ingredients
  • ½ Cup Rolled Oats (I've also used Old Fashioned Oats)
  • 1 Tbsp Chia Seeds
  • ½ Cup Unsweetened Vanilla Almond Milk (or milk of your choice) + Splash for the next day
  • 1 Tbsp Peanut Butter & Co Cinnamon Raisin Swirl (if you only have regular peanut butter just mix in some cinnamon and raisins)
  • Raisins for topping (about 2 Tbsp)
  • Cinnamon for topping
  • 1 Medium Banana for topping
Instructions
  1. Mix all ingredients together
  2. Cover with plastic wrap and refrigerate overnight or until you're ready to eat.
  3. Take plastic wrap off, add splash of milk and top with raisins, cinnamon and banana
  4. Eat and enjoy!
