Crock-Pot Barbecue Chicken

Tonight I have a super simple yet delicious recipe for you: Crock-Pot Barbecue Chicken.  I found this recipe on Pinterest forever ago and took a snapshot of it on my phone but never actually pinned it and was never able to find the link again.  So, if this is your recipe feel free to comment and I’m happy to give you credit.  One of the great things about this recipe is it only takes 4-6 hours and that’s with the Crock-Pot set on low!  So, you can realistcally decide to make this for dinner mid to late afternoon.  Also, you can put the chicken in thawed or frozen.  Obviously, it’s great for forgetful, scattered brained people like myself ;).  On to the recipe!  You will need…

1/4 Cup White Distilled Vinegar

1 Bottle of Sweet Baby Ray’s Honey Chipotle Barbecue Sauce

1/4 Cup Brown Sugar

1 Scant tsp of Garlic Powder

1 Heaping tsp of Crushed Red Pepper Flakes (this will give it a solid kick so if you don’t like spicy don’t use as much)

2-4 Chicken Breasts (they can be frozen or thawed)

Optional…but I highly suggest Reynold’s Slow Cooker Liners (I was out when I made this :()

What you’ll need to do…

Get your handy dandy Crock-Pot out.

Then place the Reynold’s Slow Cooker Liner in the Crock-Pot and spray the liner with non-stick cooking spray.  I always use Trader Joe’s Coconut Oil Cooking Spray.

Now, in a medium bowl combine all ingredients, except for chicken.

Next, place the chicken breasts in the crock pot.  Spread them out as much as possible but if they overlap a little bit it’s no big deal.

I was only using two chicken breasts this time around so they had plenty of room

Now it’s time for the sauce!  Just pour it evenly over the chicken breasts.

Look at all that crushed red!

Now put the lid on, set your Crock-Pot to low and let the barbecue chicken do it’s thing for four to six hours.

About 30 minutes before serving take two forks and shred the chicken in the Crock-Pot.  I don’t have a picture of this because I was at the gym and forgot to remind Josh to snap a few.  I’ll add a picture the next time I make this meal!

Your last step is to simply serve and enjoy with your preferred sides!

Ingredients

Instructions
  1. Get out your handy dandy Crock-Pot

  3. In a medium bowl combine all ingredients, except for chicken

  5. Pour the barbecue sauce mixture over the chicken breasts evenly
  6. Put the lid on your Crock-Pot, set it to low and let the barbecue chicken do it's thing for 4-6 hours
  7. About 30 minutes before serving use two forks to shred chicken in the Crock-Pot
  8. Lastly, serve and enjoy with your preferred sides
Notes
2 chicken breasts will yield you just over 2 large portions. So, the serving size could be anywhere from 2-6 depending on how much chicken you use and plan to eat. I have a hungry guy in my house...and okay, I eat a lot, too...so our serving sizes are typically on the larger side (aka our recipes yield less).
