Make Up Monday {2/22/16}

I started my morning off with two eggs, each topped with 1/4 piece of pepperjack cheese.

If you’ve been checking in often you know I’ve been an egg “fiend” lately.  I just can’t seem to get enough of them.  I had a doctor’s appointment in the morning but when I got back Cooper and I enjoyed sitting in the living room with the door open.

It was such a beautiful weekend here in NJ!  I was actually able to wear flats both days!

Josh had errands to run so he wasn’t around to cook lunch.  Luckily, we make these jalapeño turkey burgers so often for weeknight dinners I was able to easily pull them together.

It was a beer with lunch kind of Saturday!  And, look… my plating isn’t too shabby (typically the good pictures of food are plated by Josh).

After lunch I enjoyed another beer while watching Vanderpump Rules on Hulu.

Cooper snoozed away…I guess Vanderpump Rules wasn’t very interesting to him.

Moving on to dinner, Josh made us steak salad (using flank steak) with fresh mozzarella and tomatoes.  This has become a favorite weekend dinner of mine.  I love that it’s a bit lighter but still indulgent.

Sunday morning as I looked in the fridge I knew exactly what I would have…leftover steak salad with an egg on top.  Yum!

And then I was able to get started on meal prep.  For weekday breakfasts I went with Overnight Steel Cut Oats.  I used a recipe I found in the book Always Hungry.  The recipe is very similar to this one (except it uses almond milk instead of water and it cooks for 5 minutes instead of one).

They turned out pretty darn good.  Just add some toppings in the morning (cinnamon, blueberries, chopped almonds, etc).  For weekday lunches I made up a Mexican tofu scramble… it was just okay.

While I was meal prepping my boys cuddled on the couch.  These two…they are simply the cutest!

Soon enough it was lunchtime and I reached for some chicken salad and carrots.

After digesting we headed out for a family walk for about 30 minutes.  As I mentioned, it was simply too nice of a day not to get outside even just for just a little bit!  Jumping ahead to dinner, we went to Josh’s dad’s house where we enjoyed white fish, eggplant parmesan, broccoli rabe and arugula salad.

  2. Looks like you had a great weekend! Love all your healthy, tasty eats! And your plating looking great! Both yours and Josh’s look delicious! <3 And my weekend was pretty chill… I had a nice night in with a friend and I babysat and went to Church and had some time to myself! It was nice!
