Make Up Monday: Labor Day Weekend 2013

How was everyone’s Labor Day?  I’ve thoroughly enjoyed having this extra day to relax, eat good food, and prep for the upcoming week.  So, let’s catch up a bit!

Saturday

For starter’s Josh’s sister came in town Saturday to spend a couple days with us.  We began our night with some delicious wedge salads.

Our entree consisted of delicious chimichurri marinated flank steak, sweet potato fries and asparagus.  We, of course, also had some red wine!

Sunday

Sunday morning we decided to take Brody and Max (Emily was out of town so I was pupsitting) on a walk at Gateway Gardens.  It was gorgeous and both pups enjoyed the time outside.

After our walk we went to lunch at Natty Greene’s.  They had a pulled pork wrap special that was served with pico de gallo and guacamole that sounded amazing so I asked if they could bring it in salad form and they agreed.  With lunch I enjoyed my favorite Natty Greene’s beer, the Wildflower Wit.  It has a slight sweetness to it that I love.

After Natty’s we walked up and down Elm and stopped in at Cheesecake’s by Alex for some coffee and a treat…or two ;).

Later that night it was time for the highlight of my weekend…The Melting Pot!!!  I got an email a couple days before hand with a 4-course special for Labor Day and we jumped right on board.  It was all four courses (cheese, salad, meats/vegetables and dessert) and on top of that it was “endless” so you could have as much as you wanted of anything.  Oh, and on top of all of that it was half off bottles of wine.  So, it was a great deal that we just couldn’t pass on.

The chocolate is my absolute favorite part!  I enjoyed “endless” strawberries and bananas…and some cheesecake and marshmallows, too ;).

Monday

This afternoon we decided to do homemade pizzas for lunch.  Josh made us three awesome pizzas and I had a slice of each.

The third pizza was buffalo chicken but we ate it before I could picture it.

After lunch it was meal prep time :).  I weirdly looove meal prepping.

For breakfasts I made Overnight Oats without Yogurt.

For snacks I made baggies with sliced apples and Mini Babybel Light Cheese and baggies with 1/4 cup of almonds.

For lunch I made chicken, veggies and sweet potatoes.

Chicken Lunches

I seasoned the chicken and veggies with olive oil, black pepper and lemon pepper seasoning.  Then, I baked them at 375 degrees for 40 minutes (stirring/flipping half way through).  I made holes in the sweet potatoes with a fork, wrapped them in damp paper towels, and then microwaved them for five minutes (turning them over half way through).  Then I cut everything into bite size pieces.  Each portion has 1/2 of a chicken breast, 1/2 of a sweet potato and a decent amount of veggies (carrots, squash, green beans, and orange bell peppers).

For preworkout sustenance I made Trail Mix Cookies (via Skinny Minnie Moves).

I used this Trader Joe’s trail mix for the recipe and used 5 scoops (which are smaller than other protein powder scoops) of Trader Joe’s Vanilla Why Protein Powder.

And lastly, for dessert, I made Frozen Yogurt Trail Mix Bars (via The Lean Green Bean).

I’m super happy with all of the food I have for the week and can’t wait to eat it all!

Prep

Okay, last thing!  (I know, I know this has been a long one.)  For dinner Josh and I made Barbecue Pulled Pork (via A Healthy Slice of Life) in the crockpot.  This was SO good and we will definitely be making it again.  Along with the pulled pork we had asparagus and mac ‘n’ cheese.
