Make-Up Monday: Overnight Oats without Yogurt Recipe

Hello friends!  I’m feeling very motivated this Monday afternoon.  I felt really off last week and never really got into the groove of things so I’m happy to feel workout anticipation bubbling up inside of me.  If I could go workout right now I would…but I have this thing called work so I can’t :(.  At least there’s only a few hours left before I can just let go and hit the gym.  But I’m getting ahead of myself so let’s catch up on this past weekend.

Friday night I decided to get all the house cleaning out of the way.  I try not to drink or go out on Friday nights because I workout on Saturday mornings (<– although this most definitely didn’t happen this past weekend :() so it gave me something to do while Josh met up with a friend.  It felt nice to get that out of the way but there were crumbs all over the floor by Sunday anyway so I’m not sure if I’ll make that a regular or not.

Once Josh got home we ordered Chinese food.  I got steamed chicken with veggies and brown rice…and couldn’t resist the egg roll.

I’m thinking next time I’ll skip the rice since I can’t resist the cold noodles.

Saturday I woke up and really didn’t have any desire to work out.  I just wanted to relax outside so around 9:45am I decided to go to the pool.

It was absolutely perfect because it was early enough that the people who have real lives and went out the night before were still sleeping so I had the whole place to myself.  I stayed out for about an hour before heading home to clean up and go grocery shopping with Josh.

Later that night Josh and I met up with some friends for a night on the town.  There was an event in downtown Greensboro (I think it was called Get Downtown) where there was live music and various local vendors, so after pre-gaming at our friend’s place we headed that way.  It was a lot of fun and the band was actually really good!  They played the perfect mix of oldies and new songs that appealed to everyone there.  (Examples…Girls Just Want to Have Fun and Blurred Lines)  Soon enough the event was close to over so we decided to head to another downtown venue, The Green Burro.  It was a mix between a bar and a club and we all had a lot of fun.

Although I enjoyed a night of drinking and letting loose I felt lazy waking up Sunday and very dehydrated.  I have mentioned to Josh a few times that I want to try not drinking for a month to see how I feel and if it makes a difference.  I don’t drink a ton now but I still think it could be useful to just not drink at all.  Since I stopped taking my ADD medication I’ve had a lot to focus on as far as food and healthy eating goes and alcohol is definitely a distraction.  So, I’m thinking for the month of September I’ll try out not drinking.  It may not make a difference at all but at least I’ll have tested it out.  Okay…back to catching up.

Sunday I meal prepped and made Overnight Oats without Yogurt!  They were really good!  They keep me a bit less full than Overnight Oats with Yogurt but I still made it to 11:00am and wasn’t starving so that was awesome!  (Usually I’ll just go ahead and eat my lunch if I’m really hungry at 11:00am or have a small snack to hold me over until 12noon ish – typically a fruit or veggie.)

Ingredients:

Chia Seeds, Oats, Almond Milk, Honey, and Cinnamon

Take 1/3 cup of oats, 1/2 cup of almond milk, 2 tsp of chia seeds, 1 packed tsp of cinnamon and approximately 1 tsp honey and mix in a bowl or red cup.

Let the mixture sit overnight and it will end up looking a little something like this (…and yes I changed bowls).

Then top with some additional almond milk, stir and add whatever toppings you please (fruit, nuts, nut butter, etc.).

These were a little watery for me so next time I will definitely add less almond milk in the morning.  I might also add more chia seeds to thicken it up.

I also cut a watermelon for the first time and was pretty proud of my work :).

With it I made salads for the week that included spring mix, watermelon, feta and balsamic.

I had planned on adding turkey to it but forgot I left in on the counter do defrost and it didn’t feel cold enough this morning when I realized so we had to toss it.  Whoops :(.

After meal planning I drove out to Winston-Salem to meet up with one of my best friends from high school.  It had been at least a year…might have even been two(!!!) since I last saw him because we’ve both been crazy busy so it was nice to catch up.  It’s nice that even though we’ve both become very different people we can still relate and talk like we did back in the day.

After that it was time for a delicious dinner!!!

This has become a weekend regular and I couldn’t be happier about it.  It’s such a nice way to end the week  and start a new one.

My favorite breakfast meal minus the yogurt...something lighter.
Ingredients
  • ⅓ cup of oats
  • ½ cup of almond milk
  • 2 tsp of chia seeds
  • 1 packed tsp of cinnamon
  • 1 tsp honey
Instructions
  1. Mix all ingredients together in a red cup or bowl and let it sit overnight.
  2. In the morning add a splash of almond milk and top with whatever you like (fruit, nuts, nut butters, etc.)
