WIAW #30

Happy Wednesday!  I am starting to write this post on Tuesday and am feeling uber excited since I’m getting some good traction on my emails out to local yoga studios and gyms about teaching.  Although I haven’t secured any set classes (yet), I have completed one demo, have another set up for Wednesday (today), and am in talks with a local gym who actually has a teaching spot open (as opposed to just subbing opportunities).  I am really hoping to advocate for a 6:30am yoga class.  I can’t find a single studio that offers this, but I know plenty of people who don’t need to be at work until 8:30am or 9:00am who would benefit from some morning yoga..myself included.  We’ll see what progress I can make!  Until then, let’s chat about food for our WIAW {What I Ate Wednesday} post.  I hope you’ll share your delicious eats with me below in the comments!  I love hearing from my readers :) .

My commute this particular morning was going to be much longer than usual so I snacked on some trek mix which held me over until breakfast around 9:30am.  By then, I was eager to dig into the quiche I had made over the weekend.

Spinach Mushroom Feta Crustless Quiche

Guys… this recipe is so good, and so easy, and so affordable (if that’s a concern as well).  You could likely add all kinds of things to it (I see a peppers and onions quiche in my future).  Either way, this one consisted of spinach, mushrooms and feta as the recipe called for.  Lunch consisted of a Trader Joe’s frozen meal which was less than spectacular…and kind of flavorless, unfortunately.

As it turns out, this is actually meant to be a side dish for two people, not a frozen meal for one.  But, it was what I had with me so I ate it as is.  Next time I’ll pay more attention to what I’m getting.  If I had been at home and able to add my own seasonings (it desperately needed pepper in my opinion) I might have liked it more.  Note to self… if I would have gotten my act together and roasted the sweet potatoes I intended to use for a burrito bowl this would not have been an issue.   My fault.  As a snack around 6:00pm when I was back home I munched on some carrots and hummus.

I tried taking Cooper out on a walk after bundling us up but he was simply not having it.  He was crying and shivering so we only lasted about 5 minutes inside before spending another 15 minutes walking aimlessly around our apartment building trying to get in steps for me and energy out for Cooper.  (Excuse the blur.)

A walk really doesn’t do much though so he came back home and ran like a madman around our apartment…what we call his evening “zoomies”.  Either way, it worked because he’s currently laying down by my feet quietly playing with a toy.  Well, he was until I tried to take a quick picture…then he thought it was playtime.

For dinner, Josh picked up pizza because it was getting late and we didn’t have pesto for the meal we intended to cook.  The pizza was delicious and I was so hungry I completely forgot to take a picture.  I ended the night with a glass of white wine and an (unncessary) peanut butter cookie.

Since I forgot to take pictures of my dinner from Tuesday, I figured I’d share today’s lunch (what should have been Tuesday’s lunch instead of the frozen Trader Joe’s “meal.”  I started out with 3/4 cups of rice and then sprinkled a tablespoon of shredded cheese on top, and then covered it with a paper plate for a few minutes so the cheese would get nice and melt-y.

(Note, I didn’t eat all of the rice so next time I’ll go with 1/2 cup.)  Then, I added 1/2 cup of rinsed and drained  black beans, 1/2 cup of roasted sweet potatoes (which I seasoned with salt, pepper, garlic powder, taco seasoning mix and plenty of olive oil), 3 chopped slices of avocado, some chopped tomato, some regular salsa, and last but not least, some salsa verde.

Holy yum this was good!  Also the avocado was perfectly ripe which was just the icing on the cake…or the avocado on the burrito bowl 😉 .  Anyway, that’s all I have for this WIAW post.  Be sure to share your eats below in the comments!

  2. You’re puppy is so cute! My dog hates the cold too, he won’t go out without his booties and sweater :)

      Cooper says “thank you!” We haven’t tried booties yet… but I’m sure watching him learn to walk with them would be a hoot 😉 . Stay safe this weekend if you’re surrounded by snow like we are!
