Work Training

Wondering why my posts have been sporadic?  I’m currently in week 1 of 6 for work training which means I’m kind of all over the place and not always able to post at lunch and/or get home in time to eat dinner, prep for tomorrow and still have time to post.  Once I’m settled in my new role (which I briefly spoke about here) I’ll come up with a new posting schedule that will be much more consistent.  For today, I have a lunch break in the office so it’s time for the usual…

Workout

Yesterday, I had to be at work a half hour earlier than usual and wasn’t exactly feeling a 5:00am wake up call so I opted to do yoga in the living room after work instead.  I did the following three segments (one, two, and three) which came out to about 30 minutes or so.  These clips are a part of a 30 day yoga challenge by Do You Yoga and Erin Motz and I absolutely love the 5 or 6 I’ve tried thus far.  I use to be super into yoga and had since forgotten how relaxing and amazing it is!  I think I’m going to sign up for the challenge starting this coming Monday and complete the challenge on top of my daily workouts.  (I’ll complete my already scheduled workouts in my mornings and complete a segment of yoga after work since none of the segments are longer than 20 minutes).  I’ll keep you guys updated on my progress.

Today I completed a 3 mile wog that included a bit more walking than I would’ve liked.  My left ankle was bothering me which was weird since, to my knowledge, I haven’t done anything funky to it.  I plan on icing it tonight and hoping it’s nothing.  I didn’t walk to warm up today so that’s probably all it was.  (Note to self: walk before running…after all you did just wake up.)  On the bright side, I wore an awesome tank that Emily brought back for me for watching her dogs while she was away.

It’s not really a workout material but I wanted to where so who cares.

Food

Last night Josh and I landed on the decision to make nachos.  It was getting late and we wanted Mexican but didn’t have all the ingreidents to make Enchilada Casserole so it was an easy (and delicious) compromise.

We made it with tortilla chips, lean ground beef, refried beans, chopped green peppers, jalapenos and a pinch of taco seasoning.  I topped mine with cottage cheese (instead of sour cream), green peppers, and salsa.

Breakfast this morning was the usual – Overnight Oats.

I snacked on orange after that and lunch was a salad that I had prepared on Sunday. I made enough for 3 salads so I could spread them out throughout the week.

Mixed Turkey Salad

Into the Mixed Turkey Salad went…

  • 9 cups of baby spinach
  • 1 apple
  • 1 pear
  • 1 green pepper
  • 1 red pepper
  • 1 large cucumber
  • 6 slices of turkey (they were medium sliced)
  • A handful of almonds added the day of
  • Dressing on the side: 1 Tbsp olive oil and the juice from one squeezed lemon.

It was light, fresh, and I liked the crunch all the different fruits and veggies added.  I also had some Barbeque Pop Chips because who can resist???
